This article investigates the effects of contingent payments and a traceability system's expected traceback rate of success on the food safety effort exerted by raw material suppliers. This sheds light on when contingent payments and the reliability of a traceability system are substitutes and complements to each other in terms of inducing raw material suppliers to exert higher food safety effort. A Quarterly Food-at-Home Price Database for the U.S.

This report provides a detailed description of the methodology used to construct ERS’s Quarterly Food-at-Home Price Database (Q-FAHPD). As the name suggest, these data provide quarterly observations on the mean price of 52 food categories for specific U.S. markets. We provide a description of the Nielsen Homescan data that was used to create this database, the methodology used to classify foods into food groups, how we determined the appropriate the level of aggregation (sub-regional markets) and our calculation of average prices for each food group. This report also contains an overview and summary of the resulting data.

A REEXAMINATION OF CONSUMER BUYING BEHAVIOR FOR BEEF, PORK, AND CHICKEN

The objective of this study is to estimate demand parameters for beef, pork, and chicken using budget share equations derived from the translog indirect form of the utility function for the period 1965-81. Estimates of uncompensated direct and cross price elasticities, expenditure and income elasticities, and Allen elasticities are the used to make inferences concerning changes in consumer behavior in the purchases of beef, pork, and chicken. When pressure on real income forces reductions in total expenditures for meats, the brunt of the reduced consumption will be felt by beef; pork consumption will decease slightly; and consumption of chicken may actually increase.

Cluster analysis was used to conduct a segmentation analysis of U.S. supermarket shoppers. This study is based on the responses of a sample of 1,000 shoppers concerning the importance of 21 store characteristics in selecting their primary grocery store for the Food Marketing Institute's 2000 consumer trends survey. The agriculture and agri-food sector faces a number of challenges such as rapid technological change, increased competition and changes in consumer requirements. The sector therefore needs to adjust to keep up with the changes and become more competitive. This report provides information about the pork supply chain and highlights the structural changes that have occurred over time in the pork industry. The report uses tables, charts and figures to describe performance indicators and structural changes within the industry and shows that the Canadian pork supply chain is healthy, growing and export-oriented.

This paper explores the competing concepts of 'standards as barriers' and standards as catalysts' in the context of food safety standards in international trade in agricultural and food products. It is suggested that food safety standards can act as both a barrier to trade and the basis of competitive positioning for developing countries in international markets.
